Chnage only the charater set.

ALTER TABLE table_name CONVERT TO CHARACTER SET utf8mb4;

Change the character set and the collate.

ALTER TABLE table_name CONVERT TO CHARACTER SET utf8mb4 COLLATE utf8mb4_general_ci;
